Ricky Bobby’s Black Bean Soup
Soup Recipe:
3 slices of thick-cut maple bacon
4 Table Spoons manteca (Lard)
1 medium white onion, chopped
2 Medium carrots, chopped
3 stalks of Celery, chopped
6 cloves of fresh garlic smashed.
3 Chipotle Peppers in Adobo Sauce Chopped
1 Tablespoon ground cumin
2 Teaspoons dried oregano
2 Teaspoons Kosher Salt.
2 1/2 cups dry black beans, picked over and non-beans removed
half of a red onion Chopped.
Lime Onion Condiment:
1/2 red onion chopped
Juice from two Large Limes
1 Tablespoon Kosher Salt
Other Condiments:
1 cup crumbled Queso Fresco Cheese
Sour Cream
Tortilla Chips
Special Equipment:
Insta-Pot (4-quart Capacity or more)
Immersion Blender
Directions:
Before starting this culinary adventure, prepare a traditional margarita to enjoy during the cooking effort. Don't underestimate the importance of this step. It is critical to setting the right mood.
Set insta-pot to "sau·té." Add 3 slices of bacon a cook until crisp. Remove from insta-pot chop and reserve for later. Add Lard to Insta-Pot and melt.
Add Carrots, Celery, White Onion, and Garlic. Stir and Simmer until onion is transparent, and the bottom of the pan has deglazed. Add Chipotle Pepper, Cumin, and Oregano, and stir to incorporate.
Take a drink of your margarita and feel good about your self for making it this far.
Add Black Beans and two quarts of Water. Put a lid on Instapot and set to pressure cook for 60 Minutes. Let the insta-pot decrease pressure naturally or at least for 15 mins until you relieve the pressure manually.
Take a drink of your margarita and prepare to make the Salted Lime Onions.
Chop red onion add the juice of two limes and 1 Tablespoon Kosher Salt. Let sit while beans are cooking.
After the beans have finished cooking, use an immersion blender to blend soup till semi-smooth.
Take a drink of your margarita and prepare to Plate the Soup
Plating:
Ladle Soup into a Bowl, stir in 2 tablespoons of Sour Cream, Garnish with Lime Onions, and Queso Cheese. Serve with Chips.
Slam the rest of your margarita, make another, and enjoy your soup.
I recommend that you take some Bean-no before eating the soup.
